Spicy Tuna Poke
Dress the tuna last and eat it soon after. The acid in the dressing starts curing the fish on contact, and after about ten minutes the texture turns from silky to chalky.

Ingredients
10½ oz
tuna steak, sushi grade, cut into ¾ inch cubes2 tbsp
soy sauce1 tbsp
rice vinegar1 tbsp
sriracha2 tbsp
greek yogurt1 tsp
toasted sesame seed2
green onion, sliced thin1
cucumber, diced½
avocado, sliced⅔ cup
edamame, shelled
Method
Whisk the soy, vinegar, sriracha and yogurt into a dressing. The yogurt is standing in for mayonnaise and carries the chili the same way.
Cut the tuna into even ¾ inch cubes with a sharp knife in single strokes. Sawing tears the fibers and the cubes fall apart.
Lay out the cucumber, edamame and avocado in the bowls first.
Fold the tuna through the dressing right before serving, no more than a minute.
Spoon it over the vegetables and finish with the sesame seeds and green onion.
