Smash Burger Wrap
Smashing the beef thin on a hot pan is what gets you the lacy brown edges. A thick patty in the same pan just steams and goes grey.

Ingredients
10 oz
lean ground beef, 93% lean2
low-calorie tortilla, large¼ cup
greek yogurt3
dill pickle, finely chopped1 tbsp
tomato ketchup1 tsp
dijon mustard½ tsp
smoked paprika¼
white onion, finely diced2 cups
iceberg lettuce, shredded1½ oz
extra sharp cheddar, grated1 pinch

Equipment
Heavy frying pan · Sturdy spatula
Method
Stir the yogurt, chopped pickles, ketchup, mustard and paprika together. That is the sauce — make it first so it sits.
Get a heavy pan properly hot. Split the beef into two balls and drop them straight in.
Smash each one flat with a spatula and leave it alone for 2 minutes, until the edges go lacy and brown.
Flip, season, scatter the cheddar over and give it 90 seconds more.
Warm the tortillas for 20 seconds so they fold without cracking.
Build: sauce, lettuce, onion, patty. Fold the ends in and roll tight, then sear the seam down in the same pan for 30 seconds.
