Tandoori Chicken Bites
The oven goes to its highest setting and the baking sheet goes in empty first. A hot baking sheet sears the underside the moment the chicken lands, which is the closest a home oven gets to a tandoor. A cold baking sheet steams it.

Ingredients
1 lb
chicken thigh, boneless, skinless, cut into 1¼ inch pieces⅓ cup
greek yogurt3 cloves
garlic, crushed1 tbsp
ginger, grated1 tbsp
lemon juice2 tsp
garam masala2 tsp
smoked paprika1 tsp
ground cumin½ tsp
ground turmeric1 tsp
chili powder1 tbsp
olive oil½
red onion, sliced thin⅔ cup
cilantro, roughly chopped1 pinch
salt and black pepper
Method
Turn the oven to its highest setting, 500°F, or as high as it goes, and put an empty metal baking sheet on the top shelf to heat with it.
Mix the yogurt, garlic, ginger, lemon, garam masala, paprika, cumin, turmeric, chili, oil and a big pinch of salt into a thick paste.
Toss the chicken through it until every piece is coated. It can go straight in, or sit for up to an hour if you have it.
Pull the hot baking sheet out and tip the chicken onto it in one layer, spaced apart. It should hiss on contact.
Back in on the top shelf for 12 minutes without turning, until the edges are blackened in patches.
Rest 2 minutes, then scatter over the red onion and cilantro and squeeze over any lemon left.
